The flavor profile of half mesquite, half hickory and then searing in butter/olive oil is indescribable. The smoke melts the flavor of the fat into the meat, and gives it a better texture than just grilling alone. Never again.

It was a good smoke. I tasted beef, salt, pepper, and smoke.

perfect blend, 1:30 at 185* Then it rested for 15 minutes while the rice finished.

Yes, the reverse sear or finney method is a great way to cook steaks if you have the time.
