What is the significance of the change(s)? If it is relatively unimportant in terms of your compensation, then you might prevail but it could be a tough argument.
If you agreed to a non-compete in exchange for a compensation that would be expected to be $X, and they went in and changed it to something less than $X and paid you less than $X, then the non-compete is not so much void as not applicable (since they failed to perform their part of the agreement).
