The negotiation and contracts happen WAY before ESPN would drop MNF, allowing for a seamless transition to the new network. Since Gruden would be under contract with ESPN until after their final game (and probably months longer) he couldn't just pick up and move with the show. When it moved from ABC to ESPN, Al Michaels and John Madden didn't follow. Instead ESPN moved Mike Tirico, Tony Kornheiser and Joe Theisman over to MNF
The new network would have their own on-air people lined up for months, begging for that job.
