Blueberries in Zone 8 - Auburn

So I bought two varieties of blueberries so they could cross-pollinate and produce berries in different months. Four, one gallon plants, so fairly small. They are shooting up and taking off, btw, even in the surrounding hard clay soil. There are two pick-your-own farms witin fifteen minutes from this house that have nothing but blueberries. So there's a good history of success around here. Everything I've read is that it takes about five years to see any yeild. These small plants have bluberries on them now. What am I missing? Naturally I'm assuming these plants will just produce more as they grow? Is that not the case?
Also what I've read is that mature blueberry bushes will produce 15-20 lbs of fruit per season. Conservatively that would be 60 lbs of bluberries, which I find really hard to believe for four plants.
Anyone have blueberries and could offer some insight?

If you can protect them from wildlife. Including birds. Yes, some varieties are very prolific.

They produce when young but the birds get a ton of them so unless you net them well and pick daily you won't get much.
Have you ever seen a full size blueberry bush? Some get to 8-10ft tall. I have no doubt that they can produce 15-20lbs a season.

All of what you said makes sense but I've never grown them successfully. I tried once in SLC and its Zone 5 and it was an unsuccessful pain in the arse. Perhaps these farms are successful because people are picking fruit daily. I'm in Auburn intermittently in the summer and some football games but I've told my neighbors to have free reign on the bushes once they mature. I planted them in between our properties.
