Got him! 
Once you kill off the guys worshipping him, the best angle is long ways. From entrance to all the way down, his first move is bringing those puss balls straight to you if you don’t go down to far.
Thanks for the help; I would have never noticed the ones on his back and under his legs.
Do you guys use the boss souls for souls or other things?

I used one for a ring once, but the rest I just harvested the souls.

Easier thing would have been to avoid them and just go for the tree. They all go away once you go to stage 2.

I've watched a ton of videos on Nameless King, so I'm feeling foolishly optimistic that I can do this solo.

you turn boss souls in at firelink shrine and get specific items.

Whoops. Forgot that step. Killing the tree gets you a Transposing Kiln which you give to some mold guy sitting on one of the thrones in Firelink. He can make items or spells for you with the boss souls you collect.

I'm currently working on Dark Souls Remastered plat and am going to just play them all in order again. It's been so long, I've forgotten a lot.

They don't congregate unless that priest calls them, then every one of those birds in the area will come at you in a frenzy. So kill the birds quick regardless, and if you see a priest, same thing, but if you see a priest with birds, priest first or it will get so much worse.

Sicboy, is there a way I can carry more than 3 Estus flasks? I carry 1 blue one.

You find estus shards that you take to the blacksmith in Firelink and he'll "reinforce" the flask (more uses). You can also allot some of those to the blue flask, which is used to refill your blue bar (focus points), which is used by your weapon skills or by casting. I use neither so I just keep it all for health.
ETA And its not permanent. If you're going into a fight that you feel you'll need to use your FP, you can designate some of your uses to that, and then switch them back afterwards.

Also, when you find undead bone shards, burn them at the firelink bonfire to raise it's level, which increases the potency of the estus. When you eventually find everything, you'll have 15 estus and be +10 on the firelink bonfire.

I don't know a thing about the weapon, but if you want it, get it. You'll get more souls.

You said you're making a dex build so you should wait for a sharp gem and infuse it with that instead. I wouldn't add a fire gem to anything except maybe a dagger for parry and riposte.
