Would this game be appropriate for a 6 year old? Would they enjoy it or find it frustrating?

if your kid can read, yes. if can't, then no, unless you can play with your kid.
LEGO games and Mario Odyssey are a good place to start. You can play co-op in Lego

It definitely is, but you'll probably have to do some of the heavy lifting early on (unlocking things, changing the landscape, etc) so..... Congratulations on getting addicted to it
But seriously, the fishing and catching bugs and all that should be enough to keep the kid happy. My niece is also 6 and she likes to play on my island and do those things and buy clothes.
Also, every user on the switch shares the same island, so you can start the island and grow it while they play around and have fun.

My six year old plays and enjoys it. I don’t really understand the appeal. It seems like there’s nothing to really do after ten minutes of playing everyday, but he loves it.
