I was just to post same Eddie Vedder. It's surprising that this food myth of "locking in juices" is still so persuasive.

The best way is use a meat thermometer and make sure you don't overcook it. Make sure you stop cooking about 7 degrees short of where you want it to stop as the meat will continue to cook after it is removed from the heat source. There is no way for an overcooked piece of meat to hold juices.
Let the meat rest for 10 minutes. An important step to insure the juices don't run out of the steak when you first cut into it.
