Yep, I had that within the first two hours of smoking.


Oh well, trial and error until I get it correct.

One other tip if you don't want to do the foil technique. I haven't seen it mentioned here, but it's the bend method.

When the ribs go on, they are raw and limp.

At some point in the cook they go stiff when you pick them up in the middle with tongs.

You want to pick them up in the middle with tongs and see them bend in a U-shape.

There's a million google search results for "Bend Test for Ribs" and videos and what not.

huh? Dirty smoke ruins everything it smokes. And hickory is outstanding for all but salmon.

Well, we found out he had dirty smoke the entire time, didn't we? Nothing wrong with some at the very beginning.

These threads always crack me up with people claiming their method is THE method to use. There are dozens of ways to smoke ribs and get a solid final product. And that’s the fun of it. I have a method I really like, but sometimes I like trying something new.
