Breakfast sausage 10lbs. (Hand patty kind)
I buy a 11-12lb Boston butt and debone. Do not trim fat
If you’re butt is a little heavier just heap the below spoons a little.
Cube the meat in sizes that best fit your size grinder.
Place cubed meat in freezer for 45min to a hour (grinds better)
Once you have your meat ground, add all seasonings below and 1 cup up ice water. At this point I put the rubber gloves on and go to mixing. (Hands will be frozen after 5 minutes of mixing lol.
Pack in 1lb bags
Add a little oil to your skillet and fry slow.
3 Tbsp no iodine sea salt
1 Tbsp ground white pepper
3 Tbsp rubbed sage
1 Tsp ground ginger
1 Tbsp ground nutmeg
1 Tbsp ground thyme
1 Tbsp red cayenne pepper
1 Tbsp crushed red pepper flakes
1 cup ice water
