Wagyu Monday

A couple of weeks ago I watched the Smoky Ribs video and saw the beautiful tomahawk that Russ had. Checked out Hassel Cattle Company and was amazed at their prices. Put in my order and this was the first chance I've had to use any of the meat, but it all looks amazing. I think they may be my new primary source of beef. Still have a tomahawk and a few ribeyes to try out.

Been practicing with Tri-tips about once a week while I wait on my Backline smoker and Santa Maria grill to get finished. I will say this 26" Weber kettle has been quite a bit of fun to cook on. If I had an offset there is no way I would spend money on a ceramic.

What were their prices like? Bought an assload of wagyu last week on a fire sale. Wondering how prices compare.

Wagyu ground meat can be had for $5-6/lb. Ribeyes were $35, 2 lb tomahawk was $69.99. Chuck roast is around $7/lb, Tri-tip was $30.

They are running a speical now if you spend $100 you get a free chuck roast. I've ordered twice and got a coworker to order and each time the shipping has been $12. I got the tomahawk last night and he ordered some meat for his house and shipping was still only $12.

Ah cool. The tritip was about $12/lb and a rack of ribeyes in the $20 range. Got a few decent sized briskets for about $6/lb too.

Not usually in the market, but helping small business in times like these and all.

That's a really good price on the briskets. It was whole packets or separated?

I bet those filets are going to be really good. Take a couple of those and just blast them on a hot grill with flames on them.

Great looking cuts. I'm almost as interested in knives as meat lol. Nice piece of cutlery there.

I used to never trim a steak, but I've found myself trimming ribeyes more and more and I'm enjoying the final product.

Only had them a few weeks. Super affordable and are performing very well for my needs. I'm not a knife freak so can't give you some big breakdown.
