I've never cooked a venison roast. I want to make it with a gravy in the oven, with some potatoes and carrots too...any recipes or tips would be appreciated!

I would follow more a of a beef pot roast recipe , just substituting the meat obviously. Most importantly, a good sear on your roast because when you add onions, the water they release let’s you scrape the browned bits and is where you get your gravy. I like a lot of onions and mushrooms. You have to decide if you want to add red wine or not. Up to your own tastes.
Personally I think you should roast some potatoes separately and add them to the plate. They will develop better flavor and have some texture.

Consider using an oven roasting bag. You toss all your veggies and aromatics in there with a little wine or broth the cook a couple hours. Keeps all the moisture inside. Poke a couple slits in the top.
