Veal Chops-need recipe

I have two nice thick bone-in veal chops. I need a recipe, please.

Sautee sliced mushrooms and fresh spinach in a little olive oil.
Add salt and pepper to taste.
When the mixture cools fold in ricotta cheese.
Cut a small pocket into each chop and fill.
Secure each pocket with a toothpick.
Give each chop a nice sprinkle of kosher salt and fresh cracked black pepper and sear each side for 2 minutes in med/med high pan with a little olive oil.
Put pan in a 400 degree oven for about 10-12 minutes until medium rare and cheese mixture is heated through.

Remove when chops reach the desired temperature and enjoy.

You can also make a pretty great sauce with the bits left over in the pan. Just deglaze with a little white wine, stock, and finish with unsalted butter.

Olive oil, S&P (kosher and fresh ground). Sear on grill. High heat. Remove. Doesn't really need anything else, BUT, I sometime brown a bit of butter on the serving plate and pop a bit of fresh parsley in the butter to fry up before plating it.

OR, sometimes, I let it sit for a few minutes in Emeril's rosemary garlic marinade/dressing and then season with S&P and grill. I like rosemary and garlic on thick veal chops.
