Just a little salt and flour, deep fried. Good with a side of kraft mac & cheese. The Chinese also make a good tripe dish you can often find in good dim sum places but I'm not sure what its called.

Thanks! I do love me some tripe. When I was Arizona I couldnt find the canned tripe anywhere out there. Just the fresh stuff that the Mexicans used to make menudo which had to be cooked a long time to make it tender. My family used to bring some out to us every time someone would come out to visit. They woudl buy out all the local supermarket had to bring out to us. One of the main reasons I had to move back to the South.

Chocolate you need to head over to A Mano to get some tripe. Its made with a tomato sauce not the brown gracy I usually have, but its legit.
Mt grandmother makes tripe in a lengthy process of cleaning, boiling and ice baths (idk why) before she cooks it down with onions into a brown saucy goodness. I myself don't mess with the shite except for the plate to mouth portion of the process.
