Wife got this and asked me to make it work. For those of you that know her, how could I say no. 
So, I want to doctor it up, thinking sage sausage.
Any other ideas?

Yes to sausage, and plenty of aromatics: sauté diced celery, onion, carrot, red bell pepper in bacon grease and add to the mix. Fresh thyme and sage, parsley, more garlic....
