Tips on Keeping Jambalaya from sticking to bottom of pot

Anyone got any tips on keeping jambalaya from sticking. I just started fooling around with jamabalaya and my only problem right now is the bottom is getting a little to sticky/burnt. TIA

How long are you cooking it? Do you cut the fire down to lowest possible temp after you cover it?
It's actually normal to have some burnt rice and some stick to the bottom of the pot. That's why people tell you to flip your rice and not stir it after you cut off the fire. I never had issues with burnt rice though.
Here's what I do:
After I bring my water, seasoning, meat etc to good boil I add the rice and boil for about 6 minutes.
Cover it and cut heat to LOW
Cook on LOW for 25 minutes
Uncover and flip rice and kill your fire
Cover again let sit for another 15 minutes.
This is Poche's instructions, not mine. My rice comes out perfect for every time.
Also, I put a 1/4 cup of vegetable oil in the pot before I cook my meat. Not sure if this helps with rice not sticking

I make sure to scrape the bottom when I add my liquid after browning meat and vegetables as this anything stuck to the pot can cause rice to stick or cooking with too hard of a heat after you cover pot.

I always assume some rice will stick to the pot. I simply lower the door of the dishwasher. Place the heavy black iron pot on the door and then yell "children...come clean dad's pot." After letting them have it for half hour I take the cleaned pot up to the sink and wash it.
