Time for some homemade soup

Woke up to temps in the 40's and decided it's a good day for a big pot of vegetable/beef soup. It's on the stove cooking down right now and the house smells damn good. I'll wind up with just about 3 gallons when done and will have plenty for the freezer for later consumption.
Thankfully, the T-Day food is now gone between guests taking some home and us finishing the rest off over the past 3 days. Time for something different, and soup is a good choice when the weather turns cool.

My grandmother just used leftover ham to make a vegetable soup, I usually use beef but I thought it was great with ham

I’ve got a pot of black bean soup simmering on the stove today. Probably going to braise some chicken thighs later on, too.

I went to Rouses earlier today and they had 10 lb. bags of leg quarters for $.35 a lb. I bought two 10 lb. bags and will part them out and make a stock with the trimmings later today.
