How do you mass produce something so perfectly crispy and buttery?

When I was a kid, we had a Pepperidge Farm store 5 minutes from my house.

Read the ingredients label: it’s likely made with a combo of butter and shortening. The solid shortening lends cookies that crisp tender texture. Try making a tollhouse recipe with Hal butter, half shortening...also rest th3 dough overnight in fridge for an amazing improvement in texture.
