I believe the jambalaya and pastalaya have to be the original recipe. The franchise owners might have some leeway on other items though.

The one by Old Hammonds Hwy is the best. Worst is Acadian at Perkins.

They use the cheapest lowest quality oil. I feel
You on the shits after eating there before. When cooking anything you should always go for the highest quality cooking oil.

May be just me, but that hill was never very tall anyway. Last time I bought from there was not my idea but the stuff was more like rice and gravy than jambalaya.

Pot and Paddle's potato salad at Juban is fantastic. Not sure about other locations.

Just ate red beans and rice at the Perkins and Acadian location, 100% cafeteria style food with absolutely no seasoning or flavor, blue runner beans and instant rice is not acceptable, they should be ashamed to sell that food in South Louisiana not to mention the customer service is non existent.
