Smoking Costco Mac & Cheese on Pellet Grill

I do not have a COSTCO, but I make smoked Mac and Cheese somewhat regularly, it is flat out unbelievably good.

Also smoked Queso as well.

And Frozen Pizzas in the smoker.

The only time I've smoked mac and cheese in our smoker is with mac and cheese made entirely from scratch. Everything was made already (melted cheese mix, mac boiled and cooked) and baked a tiny bit before being put in the smoker. Spent about 1.5 hours at 225 degrees with about 2 lbs of mac. Came out incredible.

My concern with the Costco mac and cheese that they have in the premade meal aisle is that the shredded cheese won't properly melt and make the whole thing come out weird. I would bake it for whatever time it says to bake, pull out when done at around 75-85% of the time mentioned, then throw in the smoker.

Interesting thoughts.

My plan was 225 for about an hour then crank up the temp to finish it off.

You would be surprised at how quickly you'll dry out the mac and cheese at 225.
