Perfectly safe all day except for one issue:
I have read about people who filled it up to the top and set it on high all day. Some small spillover occurred on marble or granite (can't remember which) counter top. Since the spill stayed there all day the stain could not be removed... by anything... forever.
Advise was to put a pan under the crock pot if you're going to fill it up.

True.
My guess is that they put some dried beans in there with a lot of liquid and it expanded.
