What jar roux do you use? And how do you determine the ratio? Is there an equivalency chart? i.e. 1 cup flour and 1 cup oil equals XXXXX amount of jarred roux?
I use Savoies if Im in a hurry or hve to run to the store but most of the time I make it. It takes less time than going to the store.
1 cup of flour to 1 cup of oil. You cant go wrong with that.
I normally add a little extra flour to it just so I dont have an excess of oil.
I think its 1.5 cups flour to 1.5 cups oil will fill a pint jar. Been a while since I saved some. Normally I use whatever I make in a gumbo.
