Roasted Chickpeas

Watching Alton Brown make these today looked different & appetizing . Anyone have recipes of their own? Maybe a cajun one.

Ive made them a few times and tried different spices on them and they are just ok but my wife likes them. Not sure how Alton did his but use dried chickpeas soaked overnight rather than canned chickpeas which are too mushy.

I prefer starting with dried beans, but you can used canned ones too...just drain and get all the moisture off the beans with paper towels. You can skip to the seasoning part of this recipe if you are using canned beans.

1. Soak beans for 8 hours or more. Add a scoop of baking soda to the water during the soak.
2. Boil beans for 7 minutes.
3. Drain and place beans in a large bowl. Run cold water into the bowl, grab handfuls of beans, and rub them firmly between your hands to remove the shells. Shells will float to the top of the water in the bowl. Remove the shells.
4. Add beans to a pot and cover with 2" of water and bring to a boil. Simmer for 10 minutes until peas are soft.
5. Remove peas from water and into a large bowl.

Add your spices

6. Coat peas with olive oil, salt, black pepper, garlic powder, paprika..
7. To cook, broiling or in the air fryer work best. Just keep an eye on them to make sure everything gets evenly browned. Taste test after 8 minutes or so, and remove when you've got your desired level of crispiness.
