Well he needs to learn dat shot from Rabideaux's is just dat shot. Sausage should enhance the flavor of a properly executed gumbo not overpower it...dis ain't red beans and rice...

Very disappointed in this thread.
I thought it was going to be about an alternative to sausage, like meatless sausage.
