To learn how to cook a great gumbo, homemade tamales and sauce piquante. Anybody got a good recipe they want to share for either?

Any recipe that doesn't start with a 1/5th of whiskey shouldn't be trusted.

Use shredded beef/pork with tamales

Gumbo is all about the feel, hard top screw one up if the roux is right.

I would not enter into a Gumbo recipe contest in a dare from the Pope.

However, here is a tamale recipe for you.

Others make better sauce piquante than I do. They will happily help you.

1 out of 3 is not too bad though.
