First time I had your version was at a tournament at La Tour and thought they were better than any grillades I had growing up in New Orleans. I went and looked in the big cast iron pot they were serving them out of and realized then there was just another version of another dish being done by other Louisianans, and in this case better. I agree with what Gris said; pork and grits together are delicious.
