Lower carb peach almond crumb with vanilla ice cream - Photo recipe

Lower Carb, Peach Crisp with Vanilla Ice Cream



This year's peach crop was horrible, thanks to the late winter/early spring freeze we experienced. However, we still had some peaches from last year in the freezer, so I decided to make some peach crumb today. We are watching carbs when we can, so I made an effort to cut out carbs from my dessert dish by using fake sugar, almond flour and no sugar added ice cream. It came out pretty good. Here is what I did.

Ingredients:

1 cup bag frozen peach slices with juice
2 Tablespoons corn starch
4 Tablespoons Almond flour
4 Tablespoons sliced almonds
2 Tablespoons fake sugar. In this case Bocca Brand (whatever that is)
2 teaspoons vanilla
2 teaspoons cinnamon
2 Tablespoons butter

No sugar added Lactose free Vanilla Ice Cream







Directions:

I mixed the almond flour, almond slivers, butter, sugar substitute, cinnamon and vanilla to make a clumpy blend.



I mixed (thawed) peach slices with 2 Tablespoons of corn starch in an oven proof bowl.







Sprinkled the crisp mixture over the peaches.



Baked in 350 degree F oven for 30 minutes and allowed to cool for 10 minutes



This made two (big Boy) or 4 (sissy girl) servings of pretty good Peach Crisp.
