Next time, make a soffrito, which has many different meanings, but the best one for paella is heavily caramelized onions and tomato puree cooked down until almost becomes a paste.

Love making paella, the keys, to me at least, are the rice, pan, and soffrito. I've used a few Jose Andres recipes with good results. I adapted this one by subbing out lobster for crawfish. LINK

Yeah, that looks really good.

I'm gonna have to shop for a pan I guess.
