How long after best by date will you use stuff?

Most condiments - a year
Mayonnaise - maybe a couple months
Milk - a week unless it smells bad
Meat - kinda the same as milk

I use the smell/sight test. If it smells/looks bad I chunk it. If it's less than a year old, I do the same and if it passes those I might use my third small taste step. I usually wait a couple of hours and if I don't die or end up with food poisoning, i'll go with it. Hasn't failed me yet.
