As noted bigger pot is you answer. Watching the pot after the grits go in is the true secret along with turning down the heat.

Stove top: as stated before, bring water to boil, add grits, let them come to rolling boil, then lower heat and stir until they thicken.
Microwave: Cook at 50-60% power.

The laws of physics have ceased to exist on my stove, so boiling over isn't ever a problem.

To go OT a bit, I figured out how to cook perfect rice that never boils over. I bring it to a boil, turn it down to 1, and then let it sit uncovered for 3 minutes. Then I cover and let it go the remaining 17. I've never cooked a grit, though.
