I imagine it will. I have never tried anything but a cast iron skillet.

My dad has been making his roux this way for years now ever since heart surgery. And I promise you wont know the difference.
Make plenty and keep in a sealed jar, it last forever.

He uses just a little bit of oil to brown the meat and vegetables and thats it..

He also uses Turkey Sausage which is also low fat.

All this and its better than a lot of gumbos I have had in restaurants.

do the temperatures required to make a roux change the nutritional value of olive oil?
