I forgot to mention a couple things

It’s not the entire meal. 1 of 5 items served actually.

I’ve made pastalaya in my 14 qt cast iron/burner and it was really good.

A friend of mine needed to do one. He contacted these folks:
Tramonte's Meat & Seafood Market
12451 Jefferson Hwy, Baton Rouge, LA 70816

He had everything needed in bags, they told him what and when to do everything. Turned out great.

Just my two cents from someone who has cooked dozens of large pots of both Jambalaya and pastalaya, one 15G pot will push 140 12 oz bowls.

If this is 1 of 5 dishes being served for 120 people, you will be fine with a 15g pot and the calculator's process.

A 10g pot won't get you there.
