What are you planning to cook, along with the limas?
I'll share another tip from my mom.. When you cook a big Boston butt or any pork cut that makes alot of gravy, don't throw away the remaining pork gravy.. Freeze it, and you can add the pork gravy to a pot of beans you're cooking.. Remnant pork gravy is good in string beans, black eye peas, a pot of cooked cabbage.. just about anything you can think of.

I added leftover dark chicken gravy and butter to my usual recipe for lima beans last week. They tasted so good. When I make white beans from dry beans, my hubby likes the large white limas instead of the smaller navy beans.

He uses a family recipe with fresh or canned green limas, starting with a little dark roux, onions, and diced tomatoes. It's good if you like the cooked tomatoes.
