Flat iron steak

Bought one tonight at Nunu's. Cooked on the griddle and finished it in the oven. Once it was done (140*) it had shrunk and gotten thicker about the size of a tenderloin. I sliced it on a bias and against the grain. It was very tender and flavorful. We will surely do it again. I took pics, but can't get them to upload right now.

One of my favorite cuts. I really like to let them come to room temp, salt and pepper, and blast on hot grill for 3 minutes per side.

Best deal in beef.

I think flat iron steak is one of the most flavorful cuts of meat. Have to be careful not to overcook it, but it's so tasty.

Bought two today. Ancho chili powder and some oil. Slice against the grain and toss the strips in the ancho and oil. Like to have it with an avocado and tomatillo pico. Awesome.
