Give it a shot. I like the finished result. I don’t use pink salt with this brine. Had great results with Cajun land seafood boil in the brine.

I like to salt the night before. Then rinse and dry really good. Heavy dry rub
Then about an hour before I paper it I sprinkle w some brown sugar stuff.
