I have some deer sausage that is approaching 1 yr old and I need to clean out. I was thinking of taking the meat out the casing a making a spaghetti....i know the meat is ground up finer but thats the way my wife likes it. Any suggestions. TIA

We've made many a spaghetti with deer sausage like that. Just cut the sausage into 2-inch links or so and go at it like that. Damn good stuff

Why don't you brown the sausages.. you can also cook some pork sausages.. Make a regular meat sauce for your spaghetti. About 20 minutes before serving, add the sausages to your meat sauce and serve the sausages with the spaghetti and meat sauce..
