Deep fried turkey brest thighs and wings

In the past I have deep fried the whole bird but this year I’d like to try just frying some pieces like boneless breast, thighs and wings.
Who has done it, and how have you seasoned, bettered, or brined?
I have ideas but I’d like to hear others experience.
