David Chang's pork belly buns

David Chang of Momofuku made himself famous with these.

I made them last weekend. They are easy and great. I did the pork in my braiser, which worked well. The key is to let the pork cool as directed.

I cheated on the buns and used some of those frozen dough balls from the grocery store. If I could bake I'd do his, but the ones I made were fine.
