Well, it is weird, but there are a few places that sell boudin stuffed with cooked rice and raw meat. One place is Doucet's in Opelousas, I think that's the name. I can find out for sure if you need to know. I assumed Jerry Lee was doing the same thing.
You need to cook it, preferably on a grill, like you would cook raw sausage.
It'a very good.
