Chicken cracklins recipe?

Does anyone have a good chicken cracklins recipe they could share? Looking to make something similar to what I can get in Scott or Lafayette.

I peel the skin off the chicken breast after I cook them (spatchcocked on the grill)then season and place them on rack in oven @ 375. Make sure you a have a pan under the rack to catch the grease.

It’s different than what I’ve seen in Scott, but I like take the skin off of raw chicken thighs, spread them on a cookie sheet, sprinkle with salt, then roast in the oven until they’re crisp. Drain on paper towel and enjoy.

Yeah what I’ve seen from places like nunus is that it is almost like a chicken nugget but without the breading. Trying to replicate that at home.

Never gotten them from any of those places, but I pretty much always take the skins off of thighs, spread them flat on a foil covered backing sheet, season with salt/pepper/garlic powder/cayenne/paprika and bake around 300 or 325 for 30-45 mins (I think cooking at a lower temp keeps them from shrinking up as much). Usually hit them up with the broiler after that to crisp them a bit. Good like that or hitting with some buffalo wing sauce.
