I've seen it both ways Abe. But when I've seen them doing demonstrations at boat shows and other places it was always uncovered.

Dam cooked it for 3 hours covered with foil and it didnt cook worth a shite.uncovered it and was ready in 4.5 hours.(brisket and ham roast)
