My experience with NOLA waiters only dates back to the mid 1950's when professional waiters contributed greatly to the overall dining experience. That was especially true in high-end places where off-menu ordering was common. Your waiter was your agent in the kitchen. They also worked almost tax free making it a lucrative career. Races at the Fairgrounds coincided with the waiters' break between midday and evening meals.
A lot changed over the years especially income tax on tips. Since Katrina wait staff changed even more dramatically, and knowledgeable (skilled) wait staff are rare now. Some just push over-priced wines and dishes that the kitchens need to move. Which is a salesman's skill.
