Butternut (or yellow) squash and boudin dish?

I've never heard of this until I met a couple people from Southeast TX. Apparently they cook down a bunch of squash in a deep skillet with boudin, and it makes this weird squash / boudin mixture...almost like a dip. It sounds pretty strange and like a waste of good boudin, but I've had it a couple times, one with yellow squash and one with butternut squash, and it was better than I thought it be. I can't seem to find anything about this on google, but has anyone else heard of people doing this?

I've got a buddy who does something like that with eggplant.

Ditto—I’ve heard of doing this with eggplant, but not butternut squash. Butternuts are not widely grown in south Louisiana, so I’d be surprised if there were more than a few years’ tradition backing this one up. Eggplants, on the other hand, love hot weather as much as okra.

Hebert's in Maurice has chicken stuffed with eggplant dressing that I'd imagine is similar to the boudin/eggplant mix. It's frickin delicious.
