If you smoke a brisket properly, you have burnt ends. If you're talking about cutting the point off to cube it and "force" burnt ends...

you're wasting the best part of the brisket

but if you insist, cut the point into cubes, add more rub, put back onto smoker, raise temp. Profit? I guess.
