Had a link from a gas station in des Allemands. Was in foil but no casing. Never have seen this before. Is this normal for that area?

Similar. The outside seemed a little mushy but once past that it was ok. Not my favorite

It may have had a casing at one time but broke down with time and heat. Was the boudin in a rice cooker? There's a store in Gramercy that everytime I've had their boudin, it's like the casing doesn't exist. It's actually there, but broken down so much that it has no texture.
