Had a link from a gas station in des Allemands. Was in foil but no casing. Never have seen this before. Is this normal for that area?
BTW, I'm from the laffy area and get dons, billys, best stop normally

How did the flavor compare to the Lafayette/Scott style?

Similar. The outside seemed a little mushy but once past that it was ok. Not my favorite

It may have had a casing at one time but broke down with time and heat. Was the boudin in a rice cooker? There's a store in Gramercy that everytime I've had their boudin, it's like the casing doesn't exist. It's actually there, but broken down so much that it has no texture.
