I have two that are around 3lb each. I am aiming for an internal temp of 160 but not sure a rough time frame so as to not have done too early.

Any recommendations for temp and approximate time?

At 275 degrees I'd guess around 1.5 - 2 hours.

Turkeys can't tell time! Get yourself an instant read thermometer.

That doesn't have anything to do with his post but thanks Bob. Now if he would have asked "how do I know when my turkey is done", then your reply would've been perfect.

I personally would brine it before smoking.

Its not about time is about internal temp. As stated above get yourself a good thermometer and cook until you are 160-165 internal temp, pull and let rest for 20-30 min. There will be some carry over cooking while resting probably 5-8 degrees, so keep that in mind when you are determining what you want your final temp to be. 250-275 cooking temp depending on how crispy you want the skin! Good luck and enjoy!!
