From experienceI think that spiny lobsterhasa better flavorthan that of rock lobsters, and you can do a hell of lot of dishes with them that can't be donw with a rock. One little thing thatI have experience with is a deep fried lobster. Cut it in half, clean out the nasties from the head, and place the halves into a deep frier. The shite is phenomenal. Another is to take every bit of meat that you can extract from the tail, and legs. Then roll it up with veggies like mushrooms,onion, bell peppers, mushrooms(preferrably chantrelles), etc., and roll all of it up in either puff pastry or sheets of phyllo dough. Bake until done, and top with buerre blanc. True sweetness.
