Most of the top end BBQ joints in TX roll with Prime. Snow's said they use Select. Never eaten there so no comment on their quality.
IMO, if starting out you may want to start with Select until you get comfortable with trimming, seasoning, temp control. Then move up to Choice and then Prime.
Some Select grades have good marbling and if you know what you're doing you can get a lot of well smoked brisket from a Select.

I don’t use binder per se. I use lukewarm water and wipe down wet and then sprinkle rub all over, after trimming. I put it in at 200 for 4-6 hours and then up to 225. I also place it on the top rack with a pan below with some water. Keeping it as far from heat source as possible.
I smoke unwrapped until it hits 195 and then wrap with tallow and let it cool to 140-145 then put in warmer oven at 145 degrees for a long rest of 12 hours. It’s the Goldee’s method and since using this method my briskets have been the best I have ever made. Moist and tender and flavorful. I get the Goldee’s brisket rub at any Walmart in Texas.
