My favorite knife set is an antique set of Old Hickory carbon steel. You can have a great set of eBay for about $100. You cannot wash in the dishwasher, nor would you for any good knife.

I use the Boning and Chef knives often. And they're very easy to sharpen. They do rust easy so you have to hand wash and dry.

I bought a set of Zwilling, i believe German made. Nice set.
