I assume most restaurants that serves crawfish uses the ice chest method. Not sure how true that is, but I remember years back someone else on here claiming the same.

As the daughter of the guy boiling the crawfish at Brass Tap Mid Main this season, I promise you they don’t get more legit in Houston. He’s from Nola and lived in Lafayette for 25 years. He boils in all the right things, so you never need the Texan trick of adding shake after. In fact, thanks to his chili blend, sometimes they’re definitely not for the weak! It’s also one of the only places here where potatoes, corn, and sausage are included. This is the only place I’m eating bugs outside of boiling my own.
