I just finished a batch of sauerkraut. If you make it in an open crock, it will definitely smell. I used a 5 galling bucket with a fermentation lock that I use to make beer. It didn't smell at all (until you open the lid). The bucket also had a spigot on the bottom which made it easy to drain off extra juice. I put the finished sauerkraut in quart jars with screw on plastic covers. It will keep for over a year in the refrigerator.

I am going to give it a try soon, either kraut or kimchi (some sort of fermented cabbage). At first, I want to do a trial run without buying a lot of equipment to see if I like it. Thanks for all of the help and I will let you know how it goes.
